AAAD are pyridoxal 5′-phosphate (PLP)-dependent enzymes that convert aromatic amino acids into amines (Koyanagi et al., 2012). AAAD catalyze multiple reactions including the decarboxylation of L-DOPA into dopamine by DOPA decarboxylase; 5-HTP into serotonin by 5-HTP decarboxylase; tryptophan into tryptamine by tryptophan decarboxylase (TrpD); phenylalanine into phenylethylamine (PEA) by phenylalanine decarboxylase; tyrosine into tyramine by tyrosine decarboxylase (TyrD); histidine into histamine by histidine decarboxylase, among others (Wishart et al., 2018).Ref:Gonçalves S, Nunes-Costa D, Cardoso SM, Empadinhas N, Marugg JD.
